Het internetmagazine FoodNavigator meldt: The study - published in LWT - Food Science and Technology - compared the concentration in bioactive compounds in tomato-processing by-products and unprocessed tomatoes. The research team found that on a dry-weight basis, tomato by-products and wastes contained significantly lower amounts of lycopene, but had increased levels of beta-carotene, tocopherols, sterols and terpenes - while fatty acid profile were found to be similar in both processed wastes and unprocessed tomatoes.
Deze actieve stoffen worden aangetroffen in de tomatenresten, dus in wat overblijft nadat verse tomaten industrieel verwerkt zijn in allerlei processen. Het zijn stoffen waarvan de anti-oxidantwerking algemeen erkend wordt. De onderzoekers stellen daarom:
As tomato-wastes are bioorganical materials and being in line with the trend for sustainability and recycling/reusing, these value-added constituents could be either isolated from the wastes to be used as natural antioxidants for the formulation of functional foods, or to serve as additives in food systems to elongate their shelf life.
Je kunt natuurlijk ook gewoon de tomaten eten. Een feit is echter dat er veel restafval is van tomatenproducten zoals bijvoorbeeld tomatensoep, tomatensaus en tomatensap.

Toen ik bij Wouter op bezoek was, was mijn aardbeien mosaic in de proeverij uitgesloten. Het was te vers!! terwijl het 1,5 maand daarvoor was gemaakt. Slim innoverend produceren. Of het nu met sinaasappels gebeurd of met tomaten of puntpaprikas. Het geeft het beste resultaat.
