De nieuwe verpakkingsmethodiek is volgens biochemicus prof. David Edwards, die met zijn team de techniek ontwikkelde, te vergelijken met de schil van de appel, die de inhoud beschermt en bewaart. FoodProduction meldt:
The novel packaging comprises a membrane consisting of charged particles (of edible substances) bound by electrostatic forces; this surrounds a liquid, foam or solid food and is than wrapped in an edible or biodegradable hard shell.

Op dit moment is het team nog volop bezig de stabiliteit van de nieuwe verpakkingen te verbeteren. Temperatuur en houdbaarheid zijn issues. Maar de eerste resultaten zijn al te proeven, in Parijs.

Edwards vertelt: We have mostly focused on the culinary possibilities - aiming to get the taste and experience right. In our FoodLab in Paris, at Le Laboratoire, part of the Lab Store, we offer pumpkin soup in a spinach membrane, or lemon juice in a lemon membrane, or melted chocolate in a cherry membrane (black forest torte).

Binnenkort eet je dus taart in een velletje. De verpakking zie je niet meer en eet je gewoon met huid en haar erbij op.
